Green cardamom pods

In my Coconut Milk Chicken Recipe, I use whole Cardamom seeds. 

 

Cardamom is in the same plant family as ginger. There are 2 types of Cardamom pods: green cardamom and black cardamom.  Green cardamom and black cardamom both grow in India and are commonly used in Indian food recipes.  Green cardamom seeds are fried in oil to release their flavor.

 

While I purchase my whole Green Cardamom seeds at Whole Foods or farmers markets, ground Cardamom can also be used.  Ground Cardamom can usually be found in the spice section of grocery stores. 

 

You can substitute 1 ½  teaspoons of ground cardamom for 10 pods of Green Cardamom.  If ground cardamom is used, it should be added with the coconut milk, not in the previous stage where the cardamom pods are added.
