Green & White Wedding Cake with Sugar Flowers Bouquet

I made this Green & White Wedding Cake with Sugar Flower bouquet for my daughter’s wedding. She and her husband wanted flowers similar to their wedding flowers so I made a lot of different types of flowers and greenery. The cake has a green fondant middle tier to showcase all of the white sugar flowers.

I made white carnations, spray roses, snapdragons, delphinium, cushion poms, and hydrangea. I made green Belles of Ireland, Boxwood, Italian Ruscus, Seeded Eucalyptus, and Baby Eucalyptus. This is a three-tier wedding cake. I used Nicholas Lodge Flower Pro moulds for some of the flowers. and greenery.

Also Bellles of Itreland sugar flowers are at the top of this photo. White delphinium and white snapdragon sugar flowers are beside them. Also baby eucalyptus, green hydrangeas, carnations, and cushion pom sugar flowers are on the green tier.

In addition, hite snapdragons are at the top of the photo. I colored the throat yellow. Also at the top left of this photo there is baby eucalyptus. In addition at the bottom right are Belles of Ireland. Sugar flower cushion poms are in the middle. I colored the centers of the cushion poms a light green. Also white sugar flower spray roses ae beside the poms.

Also here’s a good picture of the white delphinium. I colored the tips light green. I purchased stamens for the delphinium flowers.

Also a light green hydrangea blossom is in the top left of this photo. I made a sugar hydrangea early on when they were being considered as a choice for the wedding flowers. Since I had already made them, I put them on the cake.

In addition here’s a nice picture of the buds and blooms of the white delphinium sugar flowers. Also snapdragon sugar flowers are side the delphinium. At the top of the photo are cushion poms and white spray roses sugar flowers. Also below the spray rose is a seeded eucalyptus and a small piece of belles of Ireland sugar flower.

In addition, here’s a photo of one side of the cake. In order to support the large number of sugar flowers, the middle green tier was styrofoam covered in fondant. Also since this was my daughter’s wedding and I needed to be able to participate in all of the other wedding activities, I had to have a way to arrange all of the flowers ahead of time. Because of this the assemble the cake at the event was easy. I just put the cake tiers together and I was done.

Also, here’s a view of the other side. In addition, I covered the cake board with a patterned embossed fondant. just like the fondant on the cake tiers.

The cake was a lemon pound cake with a thin lemon ganache filling, then a marzipan filling. The cake was covered in almond white chocolate ganache. Finally, it was covered in fondant.
