A reason to rejoice.
My family has been requesting more of my honey-apricot muffin-cupcakes, and I couldn’t resist the opportunity to turn them into a special Easter treat. What makes these muffin-cupcakes so special, you ask? They’re topped with a luscious pistachio cream cheese frosting, garnished with a mossy-textured mixture of honey-roasted pistachios and cookie crumbles, and adorned with shortbread cookie crosses and an array of royal icing transfers. Lots of love (and probably too much time) was put into these treats, but I think they were worth the effort.
I hope you and your loved ones had a glorious Easter weekend filled with love, joy, and of course, some delicious treats!
The detail on these cupcakes is simply amazing. The hill looks like it is covered in moss. Plus, there are rocks and multiple types of flowers on the hill. The cross looks like it is made of wood. Each hill and each cross looks slightly different. A dove, representing the Holy Spirit, has landed on the cross.
